This meal is fresh and tasty, as well as high in protein.  Mint may seem like an odd flavor for chicken, but nothing could be further from the truth! This is one of those meals that I default to when I want to make something tasty but not spend two hours in the grocery store and two hours cooking.  Plus, the leftovers are always delicious.

Ingredients

  1. In a food processor, blend pine nuts mint, and Parmesan (optional), slowly adding in half of the olive oil (1/4 cup).

  2. After the sauce has been well processed, heat the remaining olive oil (1/4 cup) over medium heat in a large pan or wok.
  3. Cook the chicken until almost done, stirring regularly.
  4. Temporarily remove chicken from the pan, and add in onion.
  5. Saute for 3-4 minutes, and then add in mushrooms, cooking for another 2 minutes.
  6. The mushrooms will release a lot of water, so drain almost all of it and return the pan to the stove. Return chicken to pan.
  7. Turn the heat up to medium high. Add in the mint pesto and stir continuously until evenly coated and cooking all ingredients for approximately two more minutes.
  8. Add salt to taste and serve, garnishing with pine nuts and mint leaves.
