Ahh… fall weather. Not like we get much of that around here, but I still get excited about the prospect when we get that first truly chilly day of the year. That’s when I start thinking about how much better the house would be if it smelled like cinnamon spice and baked goods… and tastiness usually ensues. This particular recipe is for those of us that would like to appreciate a delicious pumpkin spice latte at home- the dairy free version, of course! This recipe got the roommate seal of approval, so you know it must be good. Eat your heart out, Starbucks- who needs the PSL when you’ve got the PaleoPSL?!

A coconut milk latte flavored with pumpkin spice and everything nice!

  1. In a medium sauce pan over medium heat, heat the coconut milk just until it begins to boil.
  2. Remove from heat, and pour into blender.
  3. Add the vanilla, pumpkin spice, maple syrup (or other sweetener) to the blender with the hot coconut milk, and blend until frothy.
  4. Pour milk mixture into each coffee mug until about 2/3 full, and then pour in about 3 ounces of coffee (this is a little more than a quarter cup, and a little less than a third cup).
  5. Garnish with a pinch of pumpkin spice and serve warm!
